Heat on medium-high until water comes to a boil. Very carefully lower eggs into the boiling water. Cover and boil for 2 minutes.
Remove from heat and let sit covered for 4-16 minutes, depending on preference (4-6 minutes for soft-boiled, 8-10 minutes for medium-boiled, 12-16 minutes for hard-boiled). In the meantime, fill a large bowl with ice and water, creating an ice bath.
Once eggs have reached desired cook-time, immediately remove them from the pot with a strainer spoon and place them in the ice bath. Allow eggs to cool for at least 10 minutes.
To peel, lightly tap the eggs on a flat surface to create a crack on the center of the eggshell. Then, while pressing down gently, roll back and forth 2-3 times until the crack forms all the way around the egg. From the cracked center, carefully and slowly peel the shell away from the egg. Ensure all shell pieces are removed from the egg.
